Serves 4

1 orange, sliced thin
1 small yellow onion, sliced thin
2 Tbsp olive oil
1 lb salmon
1 tsp black pepper, freshly ground
1 garlic clove, minced
1 Tbsp fresh parsley, chopped
½ cup Perricone Farms’ fresh orange juice
1 ½ Tbsp Perricone Farms’ fresh lemon juice
1 Tbsp honey

Preheat oven to 400° F. On a baking pan, arrange onion and orange slices and season with garlic, pepper and parsley. Drizzle with olive oil. Roast for 25 minutes or until onions have caramelized. Remove from oven. Set aside.

Raise oven temperature to 450° F. Place salmon on baking pan, add caramelized onions and oranges on top. Whisk orange juice, lemon juice and honey and drizzle over salmon. Roast for 12-15 minutes and discard roasted oranges.
Serve over rice alongside your favorite vegetable.
