Serves 6

1 (3-4lb) boneless center cut pork loin
Sea salt
2 cloves minced garlic
2 cups Perricone Farms’ fresh apple juice
½ cup apple butter
¼ cup light brown sugar
2 Tbsp water
¼ tsp ground cinnamon

Preheat the oven to 375°F

Rub the pork loin with the minced garlic and season with Sea salt. Place in a baking pan and cover with foil. Bake 1 hour.

Stir together the rest of the ingredients to form a paste. Remove roast from the oven, and spread with the mixture.

Reduce oven to 350°F, cover roast with new foil and return to the oven for two hours. Let roast rest for 15 minutes before slicing.
Serve with roasted scallions and wild rice.
