MARKET SALAD WITH
CITRUS VINAIGRETTE

Serves 4

Citrus Vinaigrette
¾ cup extra virgin olive oil
¼ cup champagne vinegar
1 Tbsp whole grain mustard
3 Tbsp Perricone Farms’ fresh lemon juice
2 Tbsp Perricone Farms’ fresh orange juice
Salt & fresh ground black pepper to taste

Salad
12-14 oz of your favorite salad greens
4 oz blue cheese
4 poached eggs
1 tsp rice vinegar for poaching

Citrus Vinaigrette - Whisk all ingredients, except the olive oil, together in a bowl. Drizzle olive oil slowly into the bowl while whisking constantly. Season with salt and pepper to taste.
For extra zing, add citrus zest or lemon garnish.
